Flavoured Gin

I am fond of the odd glass or two of gin on a summer’s eve and in anticipation of the forthcoming summer I thought I would experiment with some fruity flavours, as these need a few weeks to macerate and for the flavour to intensify I have started early… well the sun is over the yardarm 🙂

I took 3 small pop top bottles and placed about 15 frozen raspberries in one bottle, 15 or so frozen blueberries in another and 4 sliced fresh kumquats in the third. Top all the bottles with gin (I used Bombay Saphire) and store in a cool cupboard out of the sun. Leave to mature for 4-8 weeks and then sieve the gin into glasses (the fruit will not be nice to consume by this time) add ice and some Fever Tree tonic for the perfect sundowner. Chin chin old bean!
